Banana
Bananas are fantastic in Banana Bread, or smoothies or eaten just straight from the freezer (they taste like ice cream and are a lot healthier!)
Freezing bananas is an excellent way to preserve them when you have too many ripe bananas on hand. It is also a great way to have bananas on hand for smoothies or baking. To freeze bananas, start by peeling them and cutting them into small pieces. Place the banana pieces on a baking sheet lined with parchment paper, making sure they are not touching each other. Freeze the banana pieces for a few hours until they are solid and firm. Once the banana pieces are frozen, transfer them to a freezer-safe container or bag and store them in the freezer. Frozen bananas can last up to two months in the freezer. To use frozen bananas, simply take out the desired amount and let them thaw for a few minutes before using them in your recipe. Enjoy!
Preparation
Peel the bananas. Keep whole and freeze or chop up and freeze.
The old belief was you had to mash the banana with sugar and lemon juice before packing in small containers. If you wish to do this, then you need approximately 8 oz sugar to 3 tablespoons of lemon juice to 3 cups of bananas.
Packaging
Pack in bags or containers which are labelled and dated.
Thawing
Eat from frozen, use in smoothies from frozen or you can thaw in refrigerator for 6 hours to use in cakes.
Storage Time
2 months.
