Corn on the Cob / Sweetcorn
I love Corn on the Cob but I often buy it and meal plans change for the BBQ or big family meal. What do you then do with this delicious vegetable if you have too many in your refrigerator? Freeze it of course. Read below to find out how to freeze this vegetable. First we list the sweetcorn kernels and then the corn on the cob.
Sweetcorn Kernels
Preparation
Blanch the cobs and cut the kernels off. Blanching will take 4 - 8 minutes depending on the size.
Packaging
Pack in labelled and dated freezer bags. Freezer containers are also suitable.
Thawing
No need to thaw the kernels. Simply toss in butter to heat through or add to dishes a couple of minutes before the end of cooking.

Corn on the Cob
Preparation
Discard all of the leaves, stem and fine silks. Arrange the cobs into sizes if necessary and blanch for approximately 4 to 8 minutes. This timing really depends on the size of the cob. Drain and cool completely.
Packaging
Once cold wrap each cob individually in cling film or foil and flash freeze until they are solid. Then pack these together in labelled and dated freezer bags. Freezer containers are also suitable.
Thawing
You can cook from frozen but I always believe they cook better if you have a chance to thaw them first. This takes about 2 hours at room temperature or overnight in refrigerator. Once defrosted boil for 5 to 10 minutes until cooked - or longer if required. My grandmother always used to put a spoonful of sugar in the boiling water when the Cob had come from the freezer! They are lovely served warm and tossed in butter.
