Currants, Black, Red and White
This is how you freeze White, Red or Black Currants.
Preparation
Remove fruit from stems. Was and dry them, leaving them whole.
Alternatively, crush with sugar or cook to a puree with a little water and sugar.
Packaging
Open flash freeze then pack in labelled and dated freezer bags.
Alternatively, pack dry with or without sugar or in a heavy syrup in labelled and dated rigid containers.
Pack the crushed and pureed currants in labelled and dated rigid containers.
Thawing
Thaw in wrappings for 45 minutes at room temperature.
Storage Time
12 months
