Greengages
This is how you freeze greengages.
Preparation
Wash, do not remove skin. Halve the fruit, remove stones and any parts which you can’t use. Pat dry.
Alternatively cook and puree with sugar.
Packaging
Open flash freeze halved fruit then pack in freezer bags.
Or pack in a light syrup in rigid containers.
Pack puree in rigid containers.
Ensure your freezer bags or containers are labelled and dated.
Thawing
Thaw in containers for 2 hours at room temperature. Use immediately

12 months
