Squash
This is how you freeze large squash (see below for small / medium).
Preparation
Peel and cut into chunks, removing the seeds.
Blanch for 2 minutes. Drain. Cool in iced water. Drain and pat dry.
Packaging
Pack in labelled and dated freezer bags or containers. Leave some headspace.
Thawing
Steam, uncovered from frozen for 1 to 2 minutes.
Storage Time
6 months
This is how you can freeze small squash.
Preparation
Trim. Leave the small ones whole and blanch for 1 minute.
Cut medium sized ones into quarters or slices and blanch for 2 minutes.
Once blanched, drain, cool in iced water, drain and pat dry.
Packaging
Pack in labelled and dated freezer bags or containers.
Thawing
Thaw whole in containers for 1 1/2 hours at room temperature. Cook quarters or slices from frozen.
