Blackberry Ice Lolly
Dairy-free blackberry lollies are simple to make and delicious to eat. Our youngest loves making up ice lollies for the freezer! This is a simple recipe that the children can help with.
Ingredients:
200 g fresh or frozen blackberries
1 tbsp lemon juice
200 g coconut milk or yoghurt
Method:
Wash the blackberries and then place them with the lemon juice in a pan over medium heat. Cook for 3-4 minutes until the juice has been released. Crush some of the berries lightly with a fork.
Place the mixture into a bowl with the coconut milk and mix or alternatively, place the mixture into two bowls.
Mixing one bowl with some of the coconut milk or yoghurt and then layer the mixtures into the lolly moulds as you wish.
Once the moulds are filled, insert lolly sticks, and freeze until solid.
Additional Notes:
Taste the mixture before placing in the ice lolly moulds. You can always add some honey or maple syrup for sweetness if required.
Freezing Notes:
This can be frozen for up to 1 month.
