Baked Banana and Orange in Rum
An excellent recipe when camping or on the BBQ, but it works equally well when placed in an oven indoors and is lovely and warming on a cold winters day or beautiful with dairy-free ice cream on a sunny day.
1 Banana per person - this recipe serves 4
Ingredients:
4 bananas
2 large oranges
juice of 1 lime
1 tbsp. dark brown sugar
2 tbsp dark rum
1 tsp ground cinnamon
Method:
Preheat the oven to 180°C / 160° Fan / 350°F / Gas Mark 4.
Line a baking dish with foil and ensure the sides are brought together and scrunch to seal.
Mix the lime, sugar, rum and cinnamon in a bowl and stir.
Cut the bananas and oranges up into about 2.5 cm thick slices or pieces and place them in the bowl with the rum mixture. Stir so everything is coated.
Place into the foil-lined dish with the rum mixture.
Bake in the oven for 10 to 15 minutes until hot through.
Serve immediately.
Additional Notes:
You can make this up to an hour ahead and keep it stored in the bowl until you are ready to place in the oven.
On a grill, this will take approximately 15 to 20 minutes to cook on medium to low heat.

I have used defrosted bananas and oranges in the recipe.
This recipe once cooked does not freeze well.
